Indian for dinner here we come

I have recently discovered this amazing range of Indian curries at Coles and Woolworths called ‘The Spice Tailor’!

The below range of The Spice Tailor curries are amazing! They range in price from around $5.50 Aus full price to $3.50 on special at either Coles or Woolworths supermarkets (as I live in Tasmania these are the main two supermarkets I refer to). I use sweet potato, potato, a tin of lentils or bean mix and a tin of coconut milk with most of my curries for a vegetarian option and each packet recommends a good protein for the type of curry chosen including chicken, fish and beef. The brand is made in India with each packet coming with authentic spices and the sauces needed for a delicious, quick and easy meal.

If you have a look at the website there is also an amazing free online cookbook with lots of recipes.

In general here is how I make my Spice Tailor curries:

What you need (tools and utensils):

  • A fry pan

  • A spatula

  • A chopping knife

  • A vegetable peeler

  • A sauce pan or rice cooker (if having your curry with rice)

Ingredients:

  • 1 tin of lentils or 1 cup of boiled dried lentils or 1 tin of mixed beans

  • 1 sweet potato

  • 3-4 small washed potatoes

  • A handful of baby spinach or kale

  • 1 tin of light coconut milk

  • 1 packet of The Spice Tailor curry

  • Brown rice (optional)

Method:

  1. Peel and chop the sweet potato into small chunks and set it aside.

  2. Wash and chop the potatoes and add them to the sweet potato.

  3. Add The Spice Tailor herbs to a fry pan with a small amount of oil on a medium heat.

  4. Boil your rice or add it to a rice cooker and cook until your desired texture.

  5. Add The Spice Tailor sauce to the fry pan with the herbs as per the instructions on the packet with the sweet potato, potato, tin of coconut milk and simmer for 15-20mins until the sweet potato and potato is cooked through but firm.

  6. Add the tin of lentils, tin of beans or spinach/kale and simmer for a further 5mins.

  7. Enjoy!

  • Tip: These meals freeze very well once cooled and are also amazing with Poppadoms or Naan bread. If you’re looking to lose weight these curries are great but go for 1 Poppadom instead of a Naan bread.
