Coconut oat bliss ball treats

This recipe is a base recipe for Coconut oat bliss balls. There are lots of ways to create your own flavours by adding anything from a few drops of peppermint, orange or strawberry essence to a small handful of choc chips for those who are trying to combine their love of chocolate with a healthy snack! Enjoy!
Coconut oat bliss balls
These Bliss Balls are great for a quick snack on the go or for breakfast with a smoothie!
What you need (tools and utensils):
A bowl
A wooden spoon or large metal spoon
A scale to measure the ingredients
A blender or food processor
A plate or chopping board to roll the Bliss Balls
An air tight container or tin to keep the Bliss Balls fresh for up to a week
Ingredients:
100-150 grams oats (quick oats or rolled oats are great and super cheap, these can also be used for porridge or my overnight oats recipe)
80-100 grams desiccated coconut and a bit extra for rolling
180-200 grams pitted dates
1-2 Tbsp vanilla essence (to taste)
1 Tbsp rice malt syrup
2 Tbsp of coconut oil that’s nice and soft (the room temperature will impact how firm the coconut oil is, you might need to give it a couple of seconds in the microwave to soften)
2 Tbsp of water or possibly a bit more if your mixture feels dry
Method:
Add all ingredients (including any extra flavours such as peppermint essence or cocoa powder) to a blender or food processor and blitz until the mixture is combined. The mixture will be quite thick and should make a nice ball in your hands. If the mixture is a bit dry and crumbly add a tiny bit more water or coconut oil and remix.
Take approximately 1-2 tablespoons of the mixture and roll it into balls.
Roll the finished balls into the extra coconut and store in an airtight container or tin in the fridge for approximately 1 week.
Tip: If adding flavourings try starting with options such as; 50 grams of chopped dried apricots, 1-2 Tbsp cocoa powder, 2 Tbsps choc chips, 50 grams raw hazelnuts or cashews (unsalted), 2 Tblsp chai seeds or Linseed, sunflower seeds and almond (LSL) powder or 2 drops of a flavoured essence. You can always add more of your flavour option but it’s hard to go backwards if you over flavour your Bliss Balls. You can also split your plain mixture in 2 and make two different types of Bliss Balls from one batch of mixture.
If you’re a coffee fan make a shot of espresso and add it in replacement of the water for a coffee flavour hit. Add a bit of cocoa too for a nice mocha Bliss Ball treat !!!
