Beef, oyster mushroom and broccolini stir-fry

A very healthy dinner and lunch option, try making a stir-fry.

Quick and easy try a stir-fry for dinner

Stir-frys are great for increasing your vegetable intake with lots of flavour, limited carbohydrates and maximum nutrients.

What you need (tools and utensils):

·       A spatula

·       A large mixing bowl

·       A chopping knife and board to chop on

·       A vegetable peeler

·       A large fry pan

Ingredients:

·       One serve of thin rice noodles 

·       1 tablespoon grated fresh ginger

·       2 garlic cloves, crushed or 1 Tbsp minced garlic

·       350g beef fillet steak, sliced thinly or 1 chicken breast sliced thinly

·       2 tablespoons olive oil

·       1 bunch broccolini, cut into 3 lengths

·       1 red capsicum, deseeded, sliced

·       ½ cup baby spinach

·       ½ frozen peas and corn

·       150g oyster mushrooms, halved or button mushrooms

·       1/4 cup (60ml) oyster sauce

·       1 tablespoon soy sauce

·       1 tablespoon kecap manis (Indonesian sweet soy)

 

Method:

1.     Place rice noodles in a heatproof bowl. Cover with boiling water and set aside for 5 minutes to separate the noodles. Drain.

2.     In a bowl, combine the ginger, garlic, beef/chicken and 1 1/2 tablespoons of the olive oil. Heat a wok over a medium high heat. In batches, add the beef and cook, for 1 minute on each side or until golden. Transfer to a plate.

3.     Add the remaining oil to the pan. Add the broccolini, capsicum and frozen peas and corn and cook, for 2 minutes. Add the mushrooms and cook for 1 minute. Add the noodles, beef, oyster sauce and soy sauce and kecap manis, and cook for 3-5 minutes, stir in baby spinach. Serve.
