Avocado and pea smashed toast

Enjoy this healthy toast topping that has fast become an Aussie brunch fav!

Avo Toast Time

We tend to love bread for brekkie but the toppings can be high in calories and low in nutrients. Try this option packed with vitamins, minerals and healthy fats.

What you need (tools and utensils):

  • A toaster

  • A small bowl

  • A chopping knife and board to chop on

  • A plate to serve

Ingredients:

  • 1/2 cup frozen peas


  • 1 avocado, peeled, pitted, cut into 2cm cubes

  • juice of 1/2 a lime


  • 2 tsp extra virgin olive oil


  • 1 clove garlic, halved


  • 2 slices sourdough, toasted


  • 80g goat’s cheese, crumbled

  • tsp chilli flakes (optional)


  • 40g snow pea sprouts

Method:

1. Cook peas in a saucepan of boiling water for 2 minutes. Refresh in iced water and drain. Transfer to a mixing bowl and mash lightly with a fork.

2. Add avocado, lime juice and a pinch of salt and pepper, and mash lightly to combine. Set aside.

3. Drizzle toasted sourdough slices with olive oil and rub lightly with half of a garlic clove.


4. Top toast with pea and avocado mix, goat’s cheese, chilli flakes and pea shoots. Serve.
