Yum Yum… Vegetable fritters are great for a quick brekkie on the go or a healthy delicious snack!

These Brekkie fritters make an amazing vegetable based breakfast with a protein hit and as a bonus they also make an easy snack on the go!

What you need (tools and utensils):

  • A bowl

  • A wooden spoon or large metal spoon

  • Measuring cups or a jug with cup measurements on it

  • Grater

  • Fry pan

  • Spatula

Ingredients:

  • 1 tin of corn kernels

  • 2-3 zucchinis, peeled and grated

  • A handful of spring onions

  • 2 eggs lightly beaten

  • 1/3 cup light milk

  • 1 cup wholemeal or plain self raising flour

  • Olive oil

  • Optional salt and pepper to season

  • Optional tomato, avocado or rocket to serve

Method:

  1. Open the tin of corn and drain the liquid away keeping the corn kernels and placing them into a bowl.

  2. Peel the zucchinis and grate them into the bowl of corn.

  3. Rinse and chop the spring onions and add into the bowl.

  4. Mix the milk and eggs into the corn and zucchini mixture.

  5. Sift the flour into the bowl and season with salt and pepper.

  6. Stir the mixture until combined being careful not over the stir, as this will make the mixture tough.

  7. Add some oil to a fry pan and heat to a medium heat. Add two big spoonfuls of mixture into the pan creating a fritter, adding as many fritters into your pan as can fit. This is normally around 4 at a time for a normal fry pan.

  8. Using a spatula turn each fritter over, and continue cooking until they are golden brown on both sides, and there is no uncooked egg visible.

  9. Enjoy with chopped tomato, avocado or rocket.

  • Tip: If you’re looking to add some extra iron to your diet add in some chopped spinach or for a super vitamin hit add a handful of Kale (which grows amazingly well in veggie patches in Tasmania).
