Broccoli & pine nut salad

Enjoy this salad for lunch, a snack or as a dinner side dish!

Salad with a twist

Broccoli is often used as a side dish with protein such as chicken or beef. This recipe combines this amazing vegetable with a few other ingredients for a delicious salad.

What you need (tools and utensils):

  • A spatula

  • A large mixing bowl

  • A chopping knife and board to chop on

  • A large fry pan

  • A steamer for the microwave or a saucepan with a steaming section

Ingredients:

  • 80g pine nuts


  • Poached or pan fried chicken breast

  • 1 finely sliced red onion


  • 1/3 cup olive oil


  • 1/4 cup lemon juice


  • 2 tsp Dijon mustard


  • 1.2kg broccoli florets

Method:

1. Toast pine nuts in a frying pan over medium heat for 2-3 minutes, stirring, until golden. Transfer to a bowl.

2. Add chicken and cook until crisp. Add to pine nuts with 1 finely sliced red onion and stir to combine.

3. Whisk olive oil, cup lemon juice and dijon mustard in a bowl. Set aside. Steam broccoli florets for 3-4 minutes, or until just tender. Drain well. Toss into pine nut mixture with dressing.

Serve as a main or a side dish.
